This 90-seat room in the heart of
McCully is chef/owner Alan Wong's paean to
the flavors of Hawaii. Known for his
piquant sauces and seasonings (Asian
lemongrass, sweet-sour, garlic, wasabi,
chili, rose-apple sorbet in season) and
high-rise ahi cake with layers of grilled
eggplant, Maui onion, and Big Island goat
cheese, Wong was the first to reposition
humble chile water (ubiquitous in Hawaiian
restaurants and local-style diners) as a
condiment de rigueur of Hawaii Regional
Cuisine. After making his mark at the Big
Island's CanoeHouse at the Mauna Lani Bay
Hotel and Bungalows, Wong moved to an
unremarkable corner of Honolulu and made
it remarkable. His airy dining room has an
open kitchen and a glassed-in terrace.
Faves include the warm California roll
with Kona lobster, opihi shooters, and
day-boat scallops in season. Open for
dinner only; about $75 for two without
wine.
