Think La Mer standards without the
formality, an intimate environment where
the elegance is not intimidating, where
people feel welcome and want to linger
over good food and wine. On the a la carte
and three-tiered prix fixe menus, with or
without wine pairings, Mavro's love of
local ingredients and his Gallic roots
(Hawaii Regional Cuisine with Provencal
influences) results in food that takes
center stage. Fans from his days at La Mer
and Four Seasons Resort Wailea will
recognize his signature ahi tartare with
caviar and the award-winning onaga baked
in Hawaiian-salt crust, sublime in an ogo
(seaweed) infusion. Even hulihuli chicken,
his newest hit, is a departure from the
norm: fresh local chicken is sprayed with
a sauce of plum wine with garlic, ginger,
and chicken demi-glace, sprinkled with
Hawaiian salt (one of five different types
of salt he uses, including the rare red
salt from Kauai), rotisserie-roasted and
presented with rosemary accents. Although,
as Mavro says, "it's difficult to impress
somebody with a chicken," this hallowed
hulihuli chicken does. Gingered Hudson
Valley foie gras, Keahole lobster with
Molokai sweet potato puree tinged with
Tahitian vanilla, and Kona coffee
crème brulee are some of the other
offerings. You can order a la carte or
from three prix fixe selections, three
courses for $48 without wine and $66 with
wine; four courses for $57 without wine
and $81 with; and six courses for $72
without wine and $106 with.
