You might think you've taken a wrong
turn when you end up in the middle of
pineapple fields at the the 1,200-foot
level on the slopes of Haleakala, but this
is part of the appeal of this wildly
popular Maui eatery known for its
down-home, unfussy, solidly pleasurable
fare. Formerly an old-fashioned plantation
store, Haliimaile, with its high ceilings,
two dining rooms, and charming all-wood
plantation architecture, isn't all looks.
Owner/chef Beverly Gannon, a Dallas native
trained at the London branch of the famed
French cooking school Le Cordon Bleu, adds
a strong American and international twist
to Hawaii Regional Cuisine. Her signature
dishes: Szechuan salmon, paniolo ribs with
Haliimaile barbecue sauce, and pizza crust
topped with crab dip. (The recipe for the
latter is a closely guarded secret that
the chef claims will be printed on her
tombstone to guarantee a steady stream of
visitors.) The sashimi napoleoncrisp
won ton layered with smoked salmon, ahi
tartare, and sashimiand the house
salad (a heavenly marriage of island
greens, mandarin oranges, onions, walnuts,
and bleu cheese) make a light dinner
worthy of the gods. Dinner for two, about
$70, food only.
