Jean-Marie Josselin's first Kauai
restaurant is still most fans' favorite of
his five Island restaurants. Its plebeian
location on the ground floor of a shopping
village belies the gustatory grandeur that
lies within. Josselin uses Kauai produce
whenever possible and has a marvelous way
with seafood, as in his signature
wok-charred mahimahi with garlic-sesame
crust and lime-ginger-butter sauce; and
the deep-fried but light-as-air tiger-eye
sushi with wasabi buerre blanc. Although
the menus at his restaurants change daily
to highlight the best and freshest, these
dishes, thankfully, are staples. Josselin
has a deft hand with clams and fresh
grilled fish, which might appear in sauces
of white truffles, peppercorns, or
coriander. At this branch of Josselin's
empire, the wide selection of appetizers
encourages shared dining and makes this an
outing that could be expensive, but
doesn't have to be. Open for dinner only;
about $80 for two, food only.
